There are more than 2,300 named varieties of this shrub. Camellia sinensis is the variety which is the source of green, black, and Oolong tea. Even though all three teas are made from the leaves of the same plant species, their chemical content and flavors are very different due to different fermentation processes. Green tea leaves are dried in hot air, then pan-fried to stop the oxidation (fermentation) process, while the leaves of Oolong tea are dried in full sunlight, and are partially oxidized. Black teas leaves are fermented in cool, humid rooms. If you cannot drink 3 cups a day, you can take a Green Tea extract in pill form. A standard dosage is 100 to 150 mg 3 times daily of Green Tea extract standardized to contain 80% total polyphenols and 50% epigallocatechin gallate.
