In medieval times, pilgrims making long journeys put sprigs of this herb in their shoes in hopes that it would give them stamina. For hundreds of years, the French have used Tarragon as a remedy for insomnia and hyperactivity. In Europe, Tarragon is cultivated for its aromatic leaves which smell like licorice and anise and are used in sauces and salads. Russian Tarragon is sometimes confused with European Tarragon, but is considered far inferior in taste to the European variety. A homemade vinegar made with Tarragon works well in treating digestive problems. An infusion of the leaves works to stimulate the appetite, relieve flatulence and colic, regulate menstruation, and alleviate the pain of arthritis and rheumatism. It also works well in treating gout and expelling worms. To use as a tea, steep 1 ½ teaspoons of the dried herb in 1 ¾ cup boiling water. For alleviating digestive upset, take 1 tablespoon of homemade vinegar made with fresh Tarragon leaves before each meal.
